Fabian Huerfano has spent more than 14 years in the hospitality industry, most recently as the General Manager and Sommelier at Yerba Buena Perry in Manhattan's West Village, which won Wine Spectator's 2010 Award of Excellence.

Currently General Manager and a partner at Rahway's exciting Modern Latin restaurant and lounge, PATRIA, Fabian is also responsible for the ever-changing seasonal cocktail list and an intriguing wine list that focuses solely on Spanish, Central and South American selections at attractive prices. Wine and spirits at Patria beautifully complement the restaurant's expertly executed Pan-Latin cuisine from acclaimed Chef Andrew DiCataldo.

Huerfano's career began at The Ryland Inn in Whitehouse, New Jersey, where he was Head Bartender and Captain at the restaurant that was awarded 4 stars by The New York Times and The Star-Ledger. His experience supervising bartenders and waitstaff led him to the original Patria in Manhattan, where he served as Sommelier and Assistant Maitre d', and was later promoted to Beverage Director.

Huerfano also served as Beverage Director and Maitre d' at top Latin restaurants Lucy and Pipa before becoming General Manager at Kafe Lounge in Elizabeth, New Jersey. Prior to arriving at Yerba Buena Perry, he was a Captain at the critically acclaimed Due Mari Pesce e Vinoteca in New Brunswick, New Jersey, a restaurant that was awarded 3 stars by The New York Times.

Huerfano enjoys seeking out new and intriguing Latin wines, and introducing them to guests. Future travels will take him to Chile and Argentina, to learn even more about those countries' wine-growing regions.

Fabian Huerfano lives with his wife Paula, and his 3 year-old daughter, Katherine, in Elizabeth.
